SOIL: Tufaceous soil

VINE AGE: 15 years

VINE VARIETY: Sangiovese, Colorino, Canaiolo, Black Malvasia

GRAPE HARVEST: Manual harvesting in september and october

SENSORY CHARACTERISTICS: It has a ruby red color, a velvety and pleasantly balanced taste, is fresh and fruity with traces of cinnamon, pepper and cherry

TASTING TEMPERATURE: 16-18° C

FOOD AND WINE MATCHING: It is excellent throughout the whole meal and goes well with all meat

MATURATION METHOD: Stainless steel tanks

FERMENTATION AND AGING:

From a thorough grape inspection and analysis the best harvest period is established as being the end of September through the middle of October. The alcohol fermentation takes place in steel tanks at a controlled temperature of 26/28 °C for 10-12 days of peel maceration. Once the fermentation is finished the wine is aged in Stainless steel and concrete tanks where the malolactic fermentation takes place and is then conserved until bottling.

AGING:

3 months in concrete vats and 6 months in bottle
